Ingredients:
● 3-4 Tbsp bacon grease (or other oil)
● 1 lb ground beef
● 1⁄2 yellow onion, diced
● 1 large sweet potato, peeled and diced
● 1 pack (12 oz) frozen brussel sprouts,
slightly thawed and cut in half (Sub
veggie of choice)
● 4 cloves minced garlic
● Salt and pepper to taste (1⁄2 to 1 tsp)
● Seasoning to taste i.e. 1 tsp chili powder,
1 tsp paprika, 1⁄2 tsp cumin, 1⁄2 tsp dried
oregano
Preparation:
- Heat 1 Tbsp bacon grease in large skillet (I prefer cast iron). Once hot, add ground beef and cook through, crumbling it as you go. Once cooked
- Add sweet potato, onion, brussel sprouts, and spices. Reduce heat, cover and cook until sweet potato and veggies are fork tender, about 10 to 15 minutes, stirring occasionally. Add more oil as needed (esp in cast iron).
- Serve.
Tips
You can really use any veggie you want, just watch your timing. More tender veggies or pre-cooked/canned veggies won’t need as
long. Add them about half way through. Serves 4 to 6. Ready in 20 – 25 minutes.
